I think that by just looking at the above Search Engine Chart you can see there are 3 definite top Search Engines that you should be focusing your SEO campaign on.
This is not to say that you shouldn't bother with the other search engines it just means that you should be concentrating your efforts on the top 3 as these will give you a greater return on your investment.
Do the Search Engine Charts change much ?
I have found that the Search Engine Charts do change slightly but the the outline still stays the same.
The order of the top Search Engines stays the same although that is not to say that they cant change, after all who knows what the future will bring.
